Did you know that broccoli is a flower? There is no better way to get children to eat broccoli than to tell
them that they are eating flowers! Plus, a little cheese and pan frying helps too. We hope you will enjoy
these crispy fritters that are a tasty and healthy way to eat broccoli.
Ingredients (for 4 fritters):
1 head of broccoli, rinsed and patted dry
1 egg, beaten
¼ cup chickpea flour (any flour will work)
½ cup shredded mild cheddar cheese
½ teaspoon garlic powder
¼ teaspoon salt
Freshly ground black pepper
Vegetable oil
Cut the broccoli into large pieces and steam for 5 minutes.
After the broccoli is done steaming, cut it into very small pieces and put in a mixing bowl.
Add in the other ingredients and mix well until
combined.
In a large frying pan, heat up enough vegetable oil to cover the bottom of the pan. Scoop a heaping
tablespoon full of the mixture into the oil and flatten with the spoon. Cook fritters for about a minute
and half on each side until golden brown and crispy. Serve with sour cream or ranch dressing!
